
Whereas in winter, Montrealers don’t hang around outside, for fear of losing a toe in the icy streets, in summer it’s quite the opposite.
Liminal spaces – vacant lots, department store parking lots, parks, the awkward space around a large fountain – are repackaged as places for community life when the weather’s mild.
Montrealers find every possible excuse to spend time together; music and food truck festivals, cultural and local farmers’ markets, spontaneous concerts…
On July 11 and 12, the Jean-Talon market organizes an old-fashioned “feast“, with long tables (a bit like a village dinner, if you grew up in the region) and a 5-course menu prepared by Montreal chefs.
It’s another excuse to spend time together, it’s delicious, it’s convivial (and afterwards, you can shop for the week).
The Feast
This is the first edition of this “feast”, following on from the market brunches of recent years. But this time, 5 female chefs have been invited to create a unique 5-course menu.
Seasonal produce, a team of female chefs and reinvented traditional recipes:Le Festin will be a celebration of women, local agriculture and Montreal’s community spirit…
Ashley Thornton, private chef and consultant, proposes a zucchini flower in tempura stuffed with eggplant puree and white miso, tomato emulsion with Miels d’Anicet honey and micro shiso.
Karine Beauchamp, chef at the ITHQ restaurant, proposes a dish ofsmoked Arctic char à la Chicoutai from Oushata, fresh cream with dulse, chicoutai gel, cucumber and tapioca tuile with squid ink.
Émilie Madeleine, from the Mano Cornuto restaurant, offers pasta with pesto alla Trapanese (cherry omatoes, roasted almonds, pecorino romano, garlic, Espelette pepper, basil, mint oil and semi-dried tomatoes).
Natalia Machado, from Ferreira Café, offers a porco à Alentejana, braised pork belly from Porcmeilleur, white wine and British Columbia Manila clams, roasted peppers and black olive powders.
Natacha Lehmann, from Pâtisserie Clémentine, proposes a rolled cake, white chocolate and melilot ganache from gourmet Sauvage, raspberry sorbet from Bourdelais farm and fruit tuiles.
For the wine and food pairing proposed by Marché Jean-Talon to accompany this (kingly) meal, two sommeliers were called in: Marie-Josée Beaudouin from Sabayon and Caroline Beaulieu from Légende Restaurant – in collaboration with La Tablée au féminin.
